There is nothing better than a delicious, hearty breakfast casserole! And this recipe is one of my favorites because of how easily I can throw a few ingredients into my crockpot and walk away. In just a few hours, this hearty dish will be warm, gooey, and ready to eat.

In fact, I like to make this crockpot breakfast casserole when we have guests spending the night so they can wake up to a warm, comforting meal! You can modify this recipe to make it vegetarian, vegan, or even add bacon along with the sausage, depending on your preferences. There is something inthis casserole that everyone will love!

How to Make Crockpot Breakfast Casserole
- In a small pan, cook the sausage until it is no longer pink in the middle.
- Add the cooked sausage, hash browns, and cheddar cheese to your crockpot. Stir to combine.

This breakfast casserole is best served fresh; however, leftovers can be stored in the fridge for up to 3 days. You can reheat this sausage breakfast casserole in the microwave until warmed to your liking. It is important to note that reheating the casserole will remove some of the moisture. You can sprinkle a small amount of water on top, before reheating, to prevent the casserole from being too dry.
How to Make Breakfast Casserole in the Oven
Even if you don’t own a crockpot, you can still make this amazing, hearty breakfast casserole in the oven!
- In a small pan, cook the sausage until it is no longer pink in the middle. Set aside.
- In a big bowl, whisk together the eggs, milk, salt, and pepper.
- Spray a 9×13 baking dish with cooking spray. Add in the sausage, cheese, and hash browns.
- Pour in the egg mixture and stir until all ingredients are fully coated.
- Cover the baking dish with tin foil. Bake for 45 minutes in a 350°F oven.
- Remove the tin foil and bake for another 10-15 minutes.
- Serve and enjoy!

- A browned top does not indicate a cooked center! Make sure to cook the casserole for the complete time to ensure the middle is set all the way through.
- There is no need to thaw or fry the hash browns beforehand since they will fully cook in the crock pot!
- To add more nutrients to your casserole, you can throw in a cup of diced bell peppers, onions, or olives. You can also add a cup of sliced jalapenos if you’re not afraid of a little spice!
